Teifi Mature is based on Teifi Natural but aged for 6 to 12 months. The maturity gives it a stronger flavour than the Natural and intensifies the complexity of the raw milk, giving the cheese a more dense, almost Comte-esque texture and taste. The underlying flavour is due to the diversity of the traditional meadows, grasses and hedges on which the dairy cows graze.
Caws Teifi was established by John Savage-Onstwedder and his family in the early 1980s, and over the past 40 years has become one of the most highly awarded artisan cheesemakers in Britain. It remains a small scale family business, these days led by John’s sons Rob and John-James.
